Description
The Coarse & Medium Combo is the all-round set for the V-Sharp Xtreme Edge and the one most households should own. Each hone is diamond on both faces: 325 grit Coarse — the same grit the Xtreme Edge ships with — to bring a dull knife back to a working edge fast, and 600 grit Medium on the reverse to smooth that edge into a cleaner, longer-lasting finish. Flip the hones on the sharpener and you have both stages in one pair.
Use the 325 face when a knife has gone properly dull or has been hard-used on the braai, in the field or in a busy kitchen. Use the 600 face for the weekly touch-up in between, so you remove less steel and the blade stays sharp for longer.

How to use it
Fit the hones with the 325 grit face toward the blade. Rest the knife heel-first in the V and draw it through toward the tip with light pressure, five to ten pulls on a moderately dull knife, until the edge bites paper. Flip both hones to the 600 grit face and give the knife two or three light pulls to refine. For a polished razor edge, follow with the Medium & Fine Combo or a 1000 grit pair.

Care
Brush both faces clean with a dry cloth or nylon brush after use to clear steel filings. Never use oil or honing fluid; it clogs the diamond surface.
