The Medium & Fine Combo is the maintenance-and-finish set for the V-Sharp Xtreme Edge. Each hone is diamond on both faces: 600 grit Medium on one side to refine and restore the edge, 1000 grit Fine on the other to polish it to a razor finish. Flip the hones over on the sharpener and you move from sharpening to finishing in seconds, with no second pair to buy, store or fit.
This is the set to choose if your knives are already in reasonable shape and you want to keep them that way. 600 grit removes little steel per stroke, so blades last for years of weekly touch-ups; 1000 grit strips the burr and leaves a clean, glassy edge that glides through tomatoes, fish and thin-sliced meat.

How to use it
Fit the hones with the 600 grit face toward the blade. Draw the knife through the V two to four times with light pressure until the edge bites paper. Flip both hones to the 1000 grit face and give the knife two or three very light pulls to polish. If a knife is properly dull, start with the Coarse & Medium Combo or a 325 grit pair first — this set is built for maintenance, not heavy reshaping.

Care
Brush both faces clean with a dry cloth or nylon brush after use; fine grit clogs more easily than coarse, so keep the 1000 side free of steel dust. Never use oil or honing fluid.
